Easy Udon Noodle Soup with Oden and Soft Egg

 When I want a quick and comforting meal, I often make this simple Udon Noodle Soup with Oden. The savory broth, chewy udon noodles, and soft egg make a delicious combination. It is easy to prepare and perfect for lunch or a light dinner.

Ingredients

  • 1 egg
  • 2½ cups water
  • ½ package Oden Set (9.7 oz package)
  • 1 serving udon noodles (from a Korean market)
  • ½ packet broth seasoning from the Oden Set
  • A little green onion, chopped

Instructions

  1. Pour the water into a pot and bring it to a boil over high heat.
  2. Cut the Oden into bite-sized pieces.
  3. Add the Oden pieces to the boiling water, then add the udon noodles.
  4. Add the broth seasoning packet, if desired, for a richer flavor.
  5. When the soup comes to a boil again, add the green onion.
  6. Crack the egg into a sieve and gently lower it into the soup.
  7. Cook for about 2 minutes. Do not overcook the egg; the yolk should remain soft.
  8. Carefully transfer the egg to the soup and serve hot.

Tip

For a beautiful egg garnish, crack the egg into a sieve and gently cook it in the simmering soup. Once the egg is lightly cooked, carefully scoop it out with a ladle and place it on top of the noodles before serving.
